Prawn and Tomato Gnocchi

Ingredients:

Prep Time: 15    Cooking Time: 15    Serves: 2
  1. 450g fresh gnocchi
  2. 1 tbsp extra virgin olive oil or butter
  3. 500g prawns, shelled and deveined
  4. 2 tomatoes peeled, seeded and chopped
  5. 1/3 cup peas
  6. 3/4 cup cream
  7. 1 tbsp Fountain Spicy Red Sauce or
  8. 1 tbsp Fountain Tomato Sauce Squeezy
  9. 1 tbsp freshly grated parmesan
  10. salt and freshly ground black pepper, to taste
  11. chopped parsley or fresh basil, to serve


   

Method:

  1. Bring a large pan of salted water to the boil and cook gnocchi for 3 to 4 minutes until cooked (or follow packet instructions). Drain.
  2. Meanwhile, heat oil or butter in saucepan and fry prawns over medium heat for 1 minute, or until just cooked.
  3. Add the tomatoes, peas, cream, Fountain Spicy Red Sauce and parmesan and combine well. Heat gently for 1 or 2 minutes, until warmed through. Season to taste.
  4. Combine gnocchi with sauce and serve topped with fresh chopped herbs.
  5. Tips: Replace prawns with mussels or pippies.
