Potato Waffles

  1. Melt butter in a frying pan over medium heat. Add onion and garlic, cook for 3-5 minutes, stirring or until onion is tender.
  2. Combine onion mixture, mashed potatoes, plain flour, eggs, Fountain Mild Mexican Sauce, salt and pepper in a large bowl until well blended.
  3. Pre-heat waffle iron according to manufacturer’s instructions.
  4. Pour ½ cup of batter into the centre of waffle iron and close lid. Cook for 3-5 minutes or until golden brown and cooked through.
  5. Delicious served with roasted tomatoes, bacon and extra Fountain Mild Mexican Sauce.
